Foodie Tuesdays: Persian in an Hour

Today’s recipe is one of one my most successful food attempts of all time. It is close-your-eyes-and-enjoy-the-moment delicious. My husband told me that this is the best way I’ve ever made chicken and that I have to make it again.

Now, that’s what I like to hear.

I have honestly never thought of trying Persian food before yesterday. Our neighbor down the hall is leaving the island in a few months, and he offered us the spices, food, and first aid stuff he doesn’t plan to use before he leaves. Do we have the most awesome neighbors ever, or what? Some of the spices he gave us are used in Persian food. He explained their uses enough to me to be able to Google intelligently and find some yummy recipes.

Behold, zeerah polow and chicken.

Zeerah polow is rice with cumin seeds. This and the chicken should take about four hours to make the right way, but I only had an hour before dinner time, so I sped things up a bit. Here’s Zeerah Polow in cut-time.

Gather your ingredients:

  • Brown rice, 3 cups
  • Cumin seeds, 3 tablespoons
  • One chicken quarter or two breasts
  • Olive oil
  • Plain yogurt, one cup
  • Dried mint, 1 tablespoon
  • Garlic powder, 1/2 tablespoon
  • Black pepper, 1/2 teaspoon
  • Paprika, 1 teaspoon
  • Salt, 1/2 tablespoon
  • Flour, one cup

Rinse rice until the water is clear. Boil six cups of water and add rice. Simmer. Scoop rice from the bottom of the pan to the top every few minutes.

Toast the cumin seeds in a pan. Set aside.

When the rice is done, drain rice and mix with cumin seeds.

Meanwhile, prepare the chicken. Cut into strips.

Mix garlic powder and yogurt. Let chicken marinate in the mixture for ten minutes.

Mix flour and rest of spices in another bowl.

Heat oil 1/4 inch deep in a skillet. Coat chicken in flour/spice mixture and fry in oil until the chicken is cooked and the batter is crispy.

Serve with limes. Enjoy!

Tropical Thanksgiving

Happy Thanksgiving weekend from the Johnsons! This was my first Thanksgiving outside the United States. Here’s how we celebrated it, expat-style.

Since Thanksgiving is strictly a U.S. holiday, nobody on Sint Maarten got the day off work or school. We weren’t too bothered by this; two of Ben’s classes have ended, so he only had to be at school for three hours. We spent the extra two hours in the morning catching some waves at the beach.

Usually, we run in a Turkey Trot (Thanksgiving 5K) on Thanksgiving morning. I have to admit that I felt a little guilty for not running on our family’s annual race day! Between my  bad knees, the humidity, and the lack of Thanksgiving festivities, though, I was definitely happy to “settle” for boogie boarding to earn my extra Thanksgiving dinner calories.

Another tradition that I missed was the annual Macy’s Thanksgiving Day Parade. Instead of that, I watched Phineas and Ferb in Spanish while Ben was in lab. Maybe I’ll be able to catch some parade clips on YouTube later.

The one traditional thing that I definitely did for Thanksgiving was cook! It was a little lonely to be in the kitchen by myself– usually, my mom, dad, sister, and I all work together to make Thanksgiving dinner. This year, we went to a Thanksgiving potluck with our church group, AUC’s Christian Medical and Dental Association. I made bread rolls and pumpkin pie. I didn’t have a pie pan, so Ben put a sign next to my casserole-dish pie that said ” πr2 .” I don’t know if anyone got it, but we thought it was funny.

Since there were three other people also making pumpkin pie (Thanksgiving calls for a LOT of pie, people!), I decided to make pumpkin spiced latte pie with chocolate swirls. You’re welcome, Starbucks lovers!

I actually got to enjoy three Thanksgiving dinners! It would have been four, but I missed the one put on my the AUC spouses organization because we rented a car that day and needed to get all our shopping done.

The first Thanksgiving dinner I had was the Saturday before Thanksgiving. My friend Stacy invited us to share in their holiday celebrations with their visiting family. She and her future mother-in-law made a delicious, home-cooked, Southern-style feast!

The second Thanksgiving meal I had was at lunch on Thanksgiving Day. American University of the Caribbean doesn’t give students the day off school, but they do give a free lunch with turkey, potatoes and all the traditional fixings!

The last Thanksgiving feast we had was the potluck with CMDA. There were about 30 people there– friends, neighbors, classmates, and people we’ve never seen before. There was a row of tables filled with aromatic dishes, and more dessert than anyone could handle. Yum! CMDA president Blake carved the turkey, Ben carved the ham, we said a prayer of thanks, and then we all sat down to enjoy the meal and the beautiful ocean view from the porch.

When we got home later, we Skyped my parents. Even though we missed them, my sister,who was in Wyoming for the holiday, and Ben’s family who are in various parts of the world, it was good to be able to talk to family and share a part of day with them, even if we could not share a meal.

What an amazing sunset. What a great day. We have so much to be thankful for: food, friends, family, video chat and email, the kids and coaches on the baseball team, our island paradise, school, church, and so much more… most of all, the saving grace of God. He is so good to us, and has blessed us more than we could ever imagine.

Arab Cooking: Manakish Za’atar

If I’ve learned anything about cooking Caribbean, it’s that Caribbean food is extremely diverse. The people who make up Sint Maarten are from every corner of the world. We come from Haiti, Curacao, the United States, India, Brazil, Serbia, Tanzania, and Syria… we are from across the globe, and we are Sint Maarten.

That being said, this dish is not traditionally Caribbean. It’s Lebanese. Our friend Soubhi introduced it to us about a week ago at a potluck.  I asked him for the recipe, and here it is!

You need:

  • Naan
  • Za’atar
    • Sumac
    • Thyme
    • Sesame seeds
    • Marjoram
    • Oregano
  • Olive Oil

First, preheat your oven to 250*F (120* C) and prepare your naan. You can buy it, or you can make it yourself.

Second, mix your spices to create za’atar. Rule of thumb is to add them in equal parts and then adjust according to taste. Adding more sumac, for example, will make the mix a bit tangier.

Mix the spice blend with enough oil to make it spreadable.

Spread the za’atar onto the naan.

Oil a baking sheet and place naan on it. Bake in the oven for about 20 minutes.

Remove from the oven and allow to cool. Cut into fourths.

Enjoy the deliciousness!

The Sonesta Resort in Maho, Sint Maarten

If you are looking for a nice place to stay on your Sint Maarten vacation, be sure to think about Sonesta Resort in Maho. This weekend, I had the opportunity to babysit there for an American University of the Caribbean employee. The resort is both adult and kid-friendly, with great things to do for all ages. The kids especially enjoyed Sonesta’s giant pool and the kids’ club room! I liked the view of Maho beach from the dining patio.

Somesta is an all-inclusive resort, and offers both day passes and overnight stays. Let me give you a tour of the resort!

Welcome to Sonesta! Your five-minute drive from Princess Juliana Airport takes you past Maho beach to this resort at the entrance to Maho. The first thing you see as you enter is the spacious lobby. Even before you leave the lobby, there is so much to do! The lobby contains a computer area, a casino, a shelf of books, shopping, a grand piano, a ping-pong table and several board games.

If you take an elevator up, you can enjoy the Sonesta Spa, where you can get a nice massage. Of course, I did not do this, but I imagine that it is a good way to relax. Also up the elevator are ten floors of rooms. The rooms are comfortable and roomy.

The best part of the resort, in my opinion, is outside. The pool is amazing! It is at least twice as large as most pools and has a quaint bridge crossing from one side to the other. Sometimes, there is a waterfall over the pool. At one end is a swim-up bar that serves alcohol as well as non-alcoholic drinks. One of the kids ordered a nonalcoholic pina colada that looked delicious.

In addition to the pool, the resort also has a beach entry. Like all of Sint Maarten beaches, it has gorgeous white sand and crystal-clear water.

You can enjoy this view from either the bar or the dining area. The buffet spread for each meal is amazing. Entrees, fruit juice, sides, delectable desserts– yummy! To my great amusement, one the kids came back from the buffet with just a roll and butter. Sometimes there is such a thing as a little too much variety, I guess.  One of the cool things about this patio is that you can watch the planes land and take off from Princess Juliana Airport. Maho Beach, just across the bay, is famous for the planes that fly low overhead and blast beach-goers with sand.

There are plenty just-for-kids things to do here, too! Outside is a rainbow jungle-gym for kids to get out their wiggles while parents enjoy the ocean view.

Inside is the Maho Bungalow Kids’ Club. This is a childcare area that is a lot of fun for the kiddos! There is an indoor playground, movies, video games, a giant-sized Connect Four, and organized activities. Eduardo and the rest of the team do a great job keeping kids entertained and safe from 10:00 am-5:00 pm while parents conduct business or enjoy what Maho has to offer. Sometimes they have weekend night pajama parties from 7:30-9:00 pm.

Historically, the AUC spouses organization takes a day trip to Sonesta to celebrate the fifth semester spouses last week in Sint Maarten. I’m looking forward to returning to Sonesta! Maybe Ben and I will even have a “daycation” there after block exams sometime.

Caribbean Cooking: French Onion Soup (On a Budget)

I love St. Maarten for many reasons– one of them is that “France” is right next door! We get the language, the culture, and the food– oh, and is the food delicious! Of course, you can’t have French food without French onion soup, so I decided to make some at home. This is my budget version of French onion soup.

Step One: Gather ingredients.

-Two medium onions

-1/4 cup margarine or butter

-Salt, pepper, and parsley (Thyme would be better, though)

-1 1/2 cups of water

-Chicken or beef bouillon to make 4 cups broth

– 3/4 cup white wine

-2 teaspoons of flour

-Cheese

-Bread Bowls

Step one: Slice onions thinly, top to bottom. If you need to have a good cry, this is a great time to do it. You’ll be weeping buckets by the end of this step anyway.

Step 2: Melt butter in a pan, add herbs, and stir in onions.

Step 3: Stir onions frequently until they are a deep golden brown.

Optional Step: Become distracted and forget to stir the onions. Burn the bottom layer, scoop the rest into a new pan, and do your best to remove the smell of burned onions from your home.

Step 4: Add flour and stir.

Step 5: Add wine and stir.

I have no idea what kind of wine is best for this, but I chose Lazo Chardonnay because it was cheap and I liked the shape of the bottle.

Step 6: Add 4 cups of broth, the water, and half a teaspoon of pepper. Turn down to simmer for half an hour and stir occasionally.

Preheat the oven to about 100* C. All you need the oven to do is melt the cheese on top of the soup.

Step seven: Pour soup into bread bowls.

I baked my own bread bowls from scratch. Because I have that kind of time in my life right now. If you have kids, a regular job, school, whatever, by all means save yourself some sanity and buy them from the store.

Step 8: Generously sprinkle cheese on the soup. I bought a mozzarella and provolone mix, but to be authentic and fancy, you should use Gruyere and Parmigiano-Reggiano.

Step 9: Put the soup in the oven until the cheese melts. Or don’t.

I put the soup and bowls in the oven to get that melty-cheese deliciousness, but it might be better to do this when the soup is served in actual bowls. Leaving the soup in the bread bowls so long before serving made them a little soggy. But if you like that, go for it!

Welcome to American University of the Caribbean!

Today is the day! We’ve been dreaming of this day, planning for it, and praying for it for many months. No, it’s not our wedding. We already did that. Today is Ben’s first day of medical school!

Like the dorky picture-snapping wife I am, I took a “first day of school” photo and posted it on Facebook.

This is technically the first day of classes, but Ben has actually been on campus all week. We first stepped onto campus for our campus tour last weekend. Our first impression of the school was that it is spacious, clean, secure, tastefully decorated, and has a great view. We also thought that the campus is pretty big, but anything looks big compared to our undergrad university. Our campus tour showed us the “welcome center,” or guard shack, as it is commonly known, where security checks in and out every single person who enters campus. The next stop was the rotunda, a large, circular room in the center of the main building. Here, there are stairs that go to a second floor, which contains a few lecture halls, the library, and other rooms. On the same level as the rotunda is a nice recreational building with a ping-pong room, a room with couches for chilling and studying, a yoga room, and the gym. I was most excited about the gym. I’ll be spending a lot of time there. It has several treadmills and ellipticals in addition to other workout machines that looked like they are in great condition.

There is also a cafeteria near this area, and the prices aren’t bad. Ben got a chicken wrap, an apple, and a bag of chips yesterday as a free new student gift, and he liked it. I think it would usually cost $5, which isn’t bad at all, considering the price of food on this island.

If you walk straight from the front door into the rotunda and then out the back door, you will arrive at note services, more lecture halls, and study rooms for rent. There is also a basketball court and the smoking area. I have no idea why anyone would be going into medicine and also be a smoker, but to each his own.

Through a patio garden area, down the steps, and across the street is The New Building and the dormitories. The New Building has many lecture rooms, offices, a smaller cafeteria area, a study zone, anatomy lab, the auditorium, etc. Ben will be spending most of his time here. His class is the biggest at the school so far (about 280, I think), so they will be living in the auditorium for most of their classes. During anatomy lab, they will be upstairs working in small groups. Thankfully, each person gets their own anatomy lab locker, so nothing that smells like cadavers and formaldehyde will come into our apartment!

Besides a tour, the school has hosted many other fun and/or required pre-class events. There were several shuttle runs to the grocery store over the weekend. Saturday was a beach volleyball game and Ben got his ID badge that same morning. Sunday was registration in the morning and a welcome meeting in the evening. Happily for us, the evening event was catered with a delicious meal! Nothing says “happy students” like free food. After the welcome meeting, everyone was invited to compete in a scavenger hunt (this provided the lovely photos for this post) and an ice cream mixer.

Monday included seminars on wellness and professionalism. If I had named them, I would have called the sessions How Not to Die and How Not to Lose Your License. Most of it seemed like common sense to me as I flipped through the booklet, but it’s always good to hear good advice, especially during times of transition and stress. Besides, there are a lot of ways to be stupid and get in trouble on this island. Hopefully people will take the warnings seriously, because coming to class with a massive hangover is not a good way to pass one’s Step Ones.  There was also an assessment and a reading quiz on Monday over the book Short White Coat.

Yesterday (Tuesday) contained more and longer workshops, as well as an island tour. We stopped in Marigot and visited a French Patisserie. It was actually a pretty good price– four delicious pastries for about six bucks. We also stopped in Orient Bay to see Saint-Martin’s best beach. I have to say that I like Mullet Bay much better. Orient is pretty seaweedy this year, and the beach was pretty busy. It does have a good view of Anguilla and some small islands, though. We didn’t stop anywhere else, but it was nice to drive the perimeter of the island and see the less touristy areas where local people live. I was delighted to finally see some fresh fruit stands! After the island tour, the students went back to school for complementary subs and a meeting with their orientation advisers.

The week is not over yet! After today’s classes, there is a student mixer. Tomorrow is the Spouse Organization’s first get-together. Friday is the white coat ceremony. And from there, it’s all about studying, studying, studying.
